Today I'm sharing the best banana bread recipe! It's been in my family for many generations! My brother has been tweaking this recipe since he was a kid, in order to come up with the perfect banana bread recipe!

It's moist, delicious & filling!

Goes great for breakfast, an afternoon snack or an evening dessert!

I love to have this with a cup of freshly brewed Cafe Special Community Coffee!

For extra goodness, spread butter on the warm slices when serving.

This delicious banana bread recipe has been in my family for years! We've been tweaking this recipe since we were kids in order to come up with the best tasting banana bread recipe! It's moist, delicious & filling! Works great for breakfast, an afternoon snack or an evening dessert!

Ingredients

  • 3 large ripened bananas (peeled)
  • 1 stick butter (softened)
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 egg white
  • 1 tsp baking soda
  • 1 pinch of salt
  • 3/4 cup sugar
  • 1 1/2 cups flour
  • 1/4 cup crushed pecans or walnuts (optional)
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large microwave safe bowl, soften 1 stick of butter for about 25-35 seconds in the microwave.
  3. Add ripened bananas into the bowl containing the softened butter and smash the banana with a fork.
  4. Add the remaining ingredients to the bowl: 1 egg, 1 egg white, 1/2 tsp vanilla extract, 1 tsp baking soda, 1 pinch of salt, 3/4 cup sugar and 1 1/2 cups of flour.
  5. Combine all ingredients using a large spoon. Once mixed, fold in the nuts and/or chocolate chips here if you decide to add these optional ingredients.
  6. Spray a bread loaf pan with non stick cooking spray.
  7. Pour the contents of the mixing bowl into the pan and place in the oven for 45-50 minus.
  8. Enjoy!

Notes:

I've baked this banana bread in both a gas and electric oven. The gas oven usually requires more around the 45 minute baking time, where as the electric oven typically requires closer to the 50 minute mark.


A perfect breakfast, afternoon snack or dessert! I love to have it with my coffee!


May spread butter on a warm slice of the banana bread if desired.
