Baked Italian Spaghetti Squash Casserole

Easy to follow recipe that offers a lower carb, lower calorie option to the classic spaghetti dish!

Ingredients

  • 1 spaghetti squash
  • 1 jar Prego light smart pasta sauce
  • 1 tbsp Italian seasoning
  • 1 can no salt added diced tomatoes (14 oz)
  • 1 tsp garlic powder
  • 2 lbs lean ground beef (93/7)
  • 1 tbsp olive oil
  • salt & pepper (to taste)
  • 1/4 cup grated parmesan cheese (reduced fat)
  • 1 cup shredded mozzarella cheese (reduced fat)
  • 1/4 cup bread crumbs

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Cut the ends of the squash off and slice the squash in half lengthwise.
  3. Scoop out the seeds and discard.
  4. Place on a baking pan flesh side up & baste with salt, pepper & olive oil.
  5. Flip squash over facing down and bake for 45 minutes or until a fork can easily pierce the flesh.
  6. Begin browning the ground meat in a skillet on medium-high heat.
  7. Add garlic powder, Italian seasoning, salt & pepper to skillet of ground meat.
  8. Add jar of Prego light smart pasta sauce and the drained can of diced tomatoes to the skillet.
  9. Simmer sauce on low heat while the spaghetti squash continues to cook.
  10. Remove squash from oven and use a fork to scrape out the "spaghetti noodles." Place the noodles back in the casserole dish.
  11. Pour sauce over the bed of spaghetti squash noodles and top with parmesan cheese, mozzarella cheese & bread crumbs.
  12. Return the casserole to the oven and bake for 5-10 minutes, or until cheese is melted.
  13. Enjoy!
